When you're hitting the West Coast, you've gotta stay for the sun baby! Whilst we typically aim our Westies as a shameless homage to the Washington and Oregon resinous hop bombs of yesteryear, Flavoured Camo takes a soft top convertible south, along California 1 for a trip along the Pacific Highway. A West Coast Pale Ale certifiably drenched with sunlight, we've taken inspiration from the laid back, relaxed vibe of the Californian way of life in this beer; with a heavy whirlpool addition of Cascade bringing the bitterness to the party to play off perfectly against fresh cut grass, pine, and grapefruit notes from our reeled back use of Chinook and Citra in the dry hop. Fermented clean for maximum drinkability.

Whisper it quietly, but now that the clocks have gone forward, the nights are getting a little brighter once again, and that can only mean one thing - it’s almost that glorious part of the year where sundowner pints with mates in a beer garden becomes a thing again. We love to make an annual celebration of this incredible point in the calendar with a beer specifically designed for just this situation, and Silk Chord continues that tradition with gusto. Setting the foundations up with an off the beaten track hop variety in Cashmere, this beer builds on a wonderful lemon-curd base, backed up with smooth bitterness from its usage on the hot side, before an additional flourish of Cashmere and Polly’s stalwart Simcoe on the cold side brings all manner of bright limes, melon, stonefruit, and peach sweetness to the party. Set back at a sessionable 4.8%, this one is for sharing good times with pals.

We've hopped this beer with the freshest Citra, Galaxy, Mosaic, and Simcoe hops to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible flavour and mouthfeel, but sessionable enough to still smash pints of.

Small IPA, Session Pale, Table Beer - whatever moniker you want to give them, we’re absolutely massive fans of reeling all that flavour intensity of our bigger beers into a beer that we can confidently smash pint after pint without worrying too much about our heads the following day. Taking inspiration from the universally loved various iterations of Kernel’s Table Beer series, Chasing Light is a massive step forward in our quest to hit those lofty peaks that the masters from London do every time without fail. Taking no liberties on the hop bill on these more sessionable and reeled in beers, we’ve gone for two absolutely huge statement hops to absolutely fill the flavour intensity to the max on this beer - Polly’s stalwart Simcoe, and every brewer’s favourite new hype hop Strata bring a metric tonne of juicy stone fruit and berry notes, backed up with intense passionfruit, bright tropical fruits, and that dank weediness that makes Strata so unique.

We’ve gone on record plenty of times for our love of Mosaic here at Polly’s. A varietal that is as complex as its name suggests, and rightly weaved throughout our beers across our six years, we absolutely love how this stateslide slammer gives off a wonderful prominent bouquet of red berries, tropical fruit, and citrus, backed up with more subtle notes of blueberries, bubblegum and mango to boot. Now that we know this varietal like the back of our hand, we’re at a point here in the brewery where we’re trying to discover what accompanying hops really bring the best out of this in-house favourite and accentuate those flavours to the nines. With Off-Colour, we thought why not try out a classic C hop in Centennial, as well as an Antipodean classic in Vic Secret - the grassy bitterness, and clean herbal pine notes in our opinion bring everything together perfectly in an IPA that shows off all the classic Polly’s characteristics - juicy, hazy, with just a whisper of bitterness on the back end.

Those who know the brewery well know we love to lean into the old school with our beers every now and again, but concurrently embrace our modern day juice slinger status at the same time. A beer that came about on one of those evenings where a glimmer of warm weather had us hanging out on the patio for a quick post-work social, Pollibu Hands is our exploration of using old school ingredients with new school techniques. It’s all kept mega simple here; a 4.5g/l whirlpool addition of Centennial on the hot side brings mellow bitterness and bite as a base, whilst 4.5g/l each of Citra and even more Centennial on the dry-hop charge brings ripe grapefruit and lemon zing, fresh cut dewy grass, and pine in abundance. All held together with our in-house LA3 strain, this is a pale ale with one foot in the old school and one foot in the new age haze craze.
