Founded in 2018 as a two-man operation working out of a converted stable on a rickety, wood-bound brew kit, we have rapidly grown since day one to where we find ourselves today – in a brewery twelve times the size of our original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members.

From those very humble beginnings, our mantra has always remained the same – never stop improving. We want to produce the best beer we possibly can, and make Polly’s the best place to work for our incredible team.

Our Beer

Since our inception, we have always maintained that we would rather excel at a small number of styles than to just tread water with a broad scope of styles. Our area of expertise lies in pale and hoppy, but addition of key team members have allowed us to broach into more experimental styles, including sours, stouts, and traditional styles with a modern twist. With our team always looking to extend our knowledge further, we arrived at the next exciting step in our development in 2022 - our first foray into the world of working with oak, and barrel ageing our beers.

We've grown pretty rapidly since that snowy January morning in 2018 when we launched with two guys running the day to day operations of the brewery. As of 2023 our numbers stand at fourteen; with some incredible talent spread across our brewhouse, sales, logistics and office teams.
