The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. A product of the New Zealand Hop Breeding Programme that we feel is overshadowed by some of its more popular contemporaries, we’re putting our flag in the ground for Rakau. Intentionally bred as a dual purpose bittering and aroma hop, this Kiwi variety bursts with incredible deep flavours and aromas of passionfruit, orchard fruits, and freshly cut citrus, with underlying notes of prickly pine and resin notes to keep everything in check. Perfect for a classic Polly’s IPA - all hail Rakau!

The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. An absolute revolution when first released, we absolutely clamoured to get our hands on Sabro, previously HBC 438, back in 2020. Born of neomexicanus heritage, this varietal is the result of two decades worth of cultivation by John I. Haas Inc to harness the desirable characteristics of the notoriously difficult to breed wild hops of the New Mexico mountains. The result of this endeavour has created one of the most unique hops in the world today, and Sabro really needs no introduction - wholly unique unto itself, this incredible varietal brings swathes of tangerine, coconut, lime and peach flavours, with a distinct hint of cedar wood, mint, and cream to boot.

The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Idaho 7 has gone from a bubbling undercurrent varietal to one of our most highly used and dependable hops; holding its own alongside Polly’s stalwarts Citra, Mosaic and Simcoe. First developed back in 2015 at Jackson Hop Farm in Idaho, The Gem State’s first generation hop farm were working with Sierra Nevada at the time on a series of varietals to use in their beers, and the seventh submitted one really seemed to bridge the gap between tropical and citrus; with some striking melon, red berry, and most prominently, tangerine marmalade notes that blew them all away. Now Jackson’s primary source of output, we’re eternally grateful for their efforts and having scaled up to IPA and DIPA strength, we’re reeling it back for a laid back, easygoing pale ale.

Every now and again you just need to go headfirst into a beer with a single-minded plan in place. The plan for Sky Flights? Simple - straight up, freshly squeezed orange juice. How to create a boozy breakfast juice though? Say no more, and step forward the freshest crop of Amarillo paired with new-to-Polly's NZ behemoth Wai-Iti - a two hop combo simple in execution, but incredible as a pair. We've only brought a gentle addition of Amarillo to the party on this beer but boy does it bring the high-citrus notes to proceedings. Where do you go from there? Oh a heavy lashing of Wai-iti to bring a metric tonne of stonefruit and lime splash to this beer? Sure why not. Positively dripping with citrus notes, we feel we've hit the mark with this beer and then some.

We’ve gone on record plenty of times for our love of Mosaic here at Polly’s. A varietal that is as complex as its name suggests, and rightly weaved throughout our beers across our six years, we absolutely love how this stateslide slammer gives off a wonderful prominent bouquet of red berries, tropical fruit, and citrus, backed up with more subtle notes of blueberries, bubblegum and mango to boot. Now that we know this varietal like the back of our hand, we’re at a point here in the brewery where we’re trying to discover what accompanying hops really bring the best out of this in-house favourite and accentuate those flavours to the nines. With Off-Colour, we thought why not try out a classic C hop in Centennial, as well as an Antipodean classic in Vic Secret - the grassy bitterness, and clean herbal pine notes in our opinion bring everything together perfectly in an IPA that shows off all the classic Polly’s characteristics - juicy, hazy, with just a whisper of bitterness on the back end.

It's back once again! A beer brewed with it in mind that trends were shifting away from the super-syrupy, boozy behemoths that graced 2020 and 2021, we’re seeing a lot of preference for straight up, simple and smashable pale ales. How do you stand out though when everybody is doing the same? You make the best dang pale ales you possibly can with the best combinations available to you, that’s what. Throughout our highly praised history, we were astounded to discover that we’d never combined Polly’s stalwart Simcoe with the enchanting Cashmere. Armed with the latest crop year of both, we immediately set about correcting this blip in our history and Floored Effect is the result. Intentional with our inclusion of Cashmere on this beer, we find pairing it with Simcoe causes those crisp and zesty lemon, lime and melon notes to absolutely sing, with subtle stone fruits in the back before mellowing out to a smooth bitterness perfect for the style.
