The Hop Studio - Wakatu Pale Ale 5.5%

The Hop Studio - Wakatu Pale Ale 5.5%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Whilst an elder statesman of the NZ hop world, Wakatu is a newer variety to us here at Polly’s. First released all the way back in 1988, predating even Polly’s stalwart Citra, this triploid hop has a whole lot going for it; with parentage of Hallertau Mittelfruher and NZ Male Hop plant, it carries all those wonderful noble characteristics, but with punchy fresh lime notes, offset with a little vanilla sweetness to boot.

The Hop Studio - Chinook Pale Ale 5.8%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Without Chinook, it could be argued that there would be no modern craft beer movement full stop. That incredibly aggressive, piney, grapefruit bite has influenced an entire landscape, and without it, modern beer as we know it may look very different all together. A cross between English variety Petham Golding, and a USDA male hop, first cultivated all the way back in 1985 - this is the grandaddy of American hops; utilised in some of the most influential beers of all time - from Stone’s landmark IPA, through BrewDog’s Punk IPA, all the way to Cloudwater’s game changing DIPA v3, this is a hop intrinsically linked through craft beer’s young but varied history, and we’re ever thankful for it. Cheers

The Hop Studio - Columbus IPA 6.2%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. A variety of which its origin is still unknown to this day, it’s widely agreed Columbus was first cultivated some time around the late 1970s, before entering commercial production shortly after. High on the alpha acids, this hop has found itself weaved throughout the journey of craft beer from its humble roots, to where we find ourselves today; a punchy, hoppy reminder of the heavily citrus-led C hops that started it all. Drawing inspiration from the kings of Columbus-hopped beers in the UK, we’ve imitated The Kernel’s use of this incredible stateside slammer in a straight up, no fuss IPA. A toast to where we’ve come from.

That full craft beer circle rears its head once again! We’ve done the entire loop several times now - hoppy and hazy > silly fruited sour > aged imperial stout > simple lager and boy do we love settling into something wonderfully unfussy after putting our tastebuds through the gauntlet. A style that is easy enough to do, but notoriously difficult to master, there is absolutely no hiding behind a lager style and Picture This is our latest entry into this naked display of our brewing journey. Light, crisp and bready, with a subtle orange fruitiness from our gentle use of Amarillo in this beer, this is a beer perfect for kicking back and taking in those final throes of the summer sun.

Lonely Street - India Pale Ale 5.9%

Lonely Street - India Pale Ale 5.9%

Concepts, concepts, concepts. In our opinion the best beers here at Polly’s begin their genesis from a simple question posed to our design team. In the case of Lonely Street, we pondered on our internal work chatter “What would happen if we took a hype hop from X generation, a hype hop from Y generation, and made it a three way dance with a hype hop from the current crop setting the craft beer world alight?”. Simple in concept, wonderfully delicious and complex in execution; Lonely Street brings together the original US hype hop Simcoe, a NZ variety that rightly sits amongst the most in demand in the world to this day since its initial release in Nelson Sauvin, and current darling of the brewing industry Strata in a fruit-forward, low bitterness celebration of what modern IPAs mean to us. Expect stonefruit sweetness, freshly crushed gooseberries, and high levels of passionfruit with a slightly dank backbone in this incredibly moreish IPA.

Hopspot Logic -India Pale Ale 6.4%

Hopspot Logic -India Pale Ale 6.4%

Sometimes you've just got to take a look at your stockholding of hops, let your hair loose doing what you do best, and make an informed decision to go as tropical as possible. With a brief that read "Lying back on a lilo drinking an Atlantic Breeze", we've gone for a full on tropical explosion with Hopspot Logic. Employing a superstar three way lineup of the freshest El Dorado, Simcoe and Mosaic we could get our hands on, this beer is positively bursting with a metric tonne of pineapple, stone fruit, watermelon, mango and just a hint of bubblegum sweetness to boot. Offset by a smaller than usual addition of both El Dorado and Mosaic in the whirlpool at 2 and 5kg respectively, this beer maintains a whisper of bitterness to keep everything in check and balanced.
