Whilst we're very much a brewery that produces modern, hop-forward beer, sometimes you have to look back to the old school and honour the breweries without whom we wouldn't be here today. Little Petal takes a detour from our usual output down the Pacific highway for a deliciously moreish West Coast Pale - clean and crisp resinous bitterness takes the lead here, with a classic hop lineup of Cascade and Simcoe.

Back for good as part of our Icons range, if Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map. Gaining near-universal praise from drinkers and industry insiders when we first brewed it in 2019 for our UK-wide Augment launch, for all the incredible places our Augment range has branched off into since then, we love coming back to what we feel is the benchmark for our DIPAs, and our brewers certainly get giddy with excitement when they know our headline beer is back on the brew plans. Featuring a five-hop mega line up of Simcoe, Galaxy, Mosaic, Citra and Ekuanot, this beer is sticky, juicy, piney and dank - 100% Polly's.

Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since.

Whilst we’re very much a tropical and fruit forward pale and hoppy brewery by trade, we do occasionally brew to the seasons here at Polly’s HQ. With it being the peak of winter, we’re yearning for something simple, to be enjoyed in front of a roaring fire in a pub with mates. Step in Get Comfortable. We’ve always floated around the dark side of things, but never really explored too far within this territory. Wanting to up the oats on the grist bill to create a purposely full bodied stout, we’re letting the malt and the malt alone do the talking on this beer. A full 20% of the grist bill being oats, we’ve backed this up with black malt and pale chocolate malt to go with our house standard extra pale to create a velvety smooth, decadent stout that isn’t extreme on the strength. Perfect for this time of year.

Those who know the brewery well know we love to lean into the old school with our beers every now and again, but concurrently embrace our modern day juice slinger status at the same time. A beer that came about on one of those evenings where a glimmer of warm weather had us hanging out on the patio for a quick post-work social, Pollibu Hands is our exploration of using old school ingredients with new school techniques. It’s all kept mega simple here; a 4.5g/l whirlpool addition of Centennial on the hot side brings mellow bitterness and bite as a base, whilst 4.5g/l each of Citra and even more Centennial on the dry-hop charge brings ripe grapefruit and lemon zing, fresh cut dewy grass, and pine in abundance. All held together with our in-house LA3 strain, this is a pale ale with one foot in the old school and one foot in the new age haze craze.

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Idaho 7 has gone from a bubbling undercurrent varietal to one of our most highly used and dependable hops; holding its own alongside Polly’s stalwarts Citra, Mosaic and Simcoe. First developed back in 2015 at Jackson Hop Farm in Idaho, The Gem State’s first generation hop farm were working with Sierra Nevada at the time on a series of varietals to use in their beers, and the seventh submitted one really seemed to bridge the gap between tropical and citrus; with some striking melon, red berry, and most prominently, tangerine marmalade notes that blew them all away. Now Jackson’s primary source of output, we’re eternally grateful for their efforts and having scaled up to IPA and DIPA strength, we’re reeling it back for a laid back, easygoing pale ale.

It’s the little joys that are the best - after a long week slogging away at the brewkit, a busy week moving beer out of the brewery, a marathon of a week touching base with customers and ensuring they’re getting what they need, there’s a small victory in that first sip of a crisp, cold lager; ideally with the sun beating down to boot. We were honoured to bring our brewing ingredients supplier Lallemand to North Wales after hearing of a brand new hybrid yeast strain that could turn one of our lagers around much faster than usual. Utilising this as the basis of our beer, we’ve gone very much stripped down, back to basics, no fuss on this lager. A gentle addition of noble hop Hallertauer Mittelfruh gives a lager that is everything we look for after a long week at the brewery - clean, crisp, with a floral and slightly spicy edge.

Craft beer's favourite oxymoron next to White Stout makes a triumphant return just in time for the high peak of summer! After bringing the Pina colada party to the style with the New Tropical Reflex and Tropical by Nature’s Sabro-heavy hop bills previously, we've gone very much back to basics for our 2024 entry, Which Pendant. Our exploration of what hops and combinations work well in this cult classic style is never ending; and for this beer we decided to utilise a hot side addition of Vic Secret for a brash piney base layer, before more Vic Secret and Citra on the cold side bring a punchbowl of citrus, bright orange and pineapple to the party. Utilising our standard Polly’s Pale and Hoppy grist bill with a flourish of Crystal and Carafa Special at the end of the mash, this beer sings with the usual Polly’s checklist of tropical IPA notes, presented in a defiantly dark beer.

We have a policy here at the brewery of collaborative effort when it comes to all things Polly’s. Every Monday morning we sit down as a team and pool together any ideas we’ve had throughout the week to bring to the table and turn into a reality – whether it’s a weird and wonderful beer recipe, a campaign to run alongside a significant upcoming date in the calendar, all the way down to a simple TikTok video. On a gloomy Monday morning not too long ago our social media manager Adam had a spark of inspiration, and asked the group “What is it our customers want? No, what do they need?”. Taking influence from the crazy panic buying of early covid all the way to the limits on food items of today, we realised an essentials pack was the thing missing from our storefront. Featuring our core, icons, and a rotating selection of our specials you can’t miss, this pack is everything we love about our beers on a monthly basis. *The contents of this box are subject to change in line with stock availability.
