Fast Version – India Pale Ale 6.2%

We love making callbacks to previous beers here at Polly’s, and we’re hitting with a one-two punch one week after another here with Fast Version. After falling in love with the equal layers concept we used on Binded By recently, we’ve taken the same concept, amplified it, and applied it to an all-out banger of an IPA. Utilising a larger addition of Mosaic as our foundation this time to bring a resinous base to the beer, we’ve gone for equal parts Citra, El Dorado, Idaho 7 and Simcoe on the cold side of this beer to create a full-on tropical explosion and lean into our status as a modern day juice slinger of a brewery. Expect to be finding fresh cut lemons and limes, ripe pineapple, peach and papaya, before a final flourish of watermelon and pear complete this frankly silly fruit basket of a beer. Awesome.
