There was just something about growing up as beer drinkers as the craft beer movement was growing. Being in that moment where everything was new and shiny and exciting, queues around the corner from a bottleshop for the latest hype release, texts from mates to say a first pour was happening and you simply had to get back into town to try it, you just had to be there to truly appreciate it. Whilst craft beer has grown up and (whisper it quietly) joined the mainstream, we wanted to harken back to those days where there was a genuine excitement about new styles and techniques brewers were employing to poke their heads above the crowd. Rustic Rouge is our callback to the wonderful simplicity, but tremendous complexity of the Red IPA; a style that seems to have fallen from the radar in more recent years of haze craze. A single-hop showcase of Amarillo plays off a flourish from our usual grist bill with red crystal rye malt to create a beer that has an aggressively bitter bite, with a bright burst of marmalade sweetness.

We know we’re getting toward elder statesman status here at Polly’s when we see a hop variety develop from its HBC number to a full commercial release. Talus first came into our brewing lives as HBC 692 and we’ve been huge fans of it since it first landed on our doorstep back in 2020 - our brewers noting it being the true definition of a dual-purpose hop; both massively expressive on the hot side and bursting with aroma and flavour on the cold side. It really could only make the most amount of sense to pair this incredible newer school variety with another in-house favourite on the back of its reliability across the entire brewing spectrum in Simcoe. Both utilised in the whirlpool to bring a base of pleasant bitterness to keep things in check, these awesome stateside slammers are in full song on the cold side additions - massive stonefruit, grapefruit, apricots with cream, and rose complexity are in abundance on this IPA that is fully Polly’s.

Everyone loves a maverick - those who go against the grain, the ones who are independent from the group and do their own thing. When we started brewing those first Loka Polly beers back in early 2018 we were very much against the grain of what our local area wanted; hazy beer? It’ll never sell. Modern beer? Keep it traditional if you want to make it around here. We found we were the mavericks, and we’re absolutely over the moon that trends have grown and developed to such an extent that we’re inspiring the next wave of mavericks looking to shake up our industry. This is an IPA brewed for those starry eyed mavericks of 2018 and those future innovators - a straight up tropical punchbowl consisting of our favourite hops in Azacca, Citra and Galaxy; all working in harmony to bring those sweet clementine, mango, and pineapple flavour notes that we took our own inspiration from.

Small IPA, Session Pale, Table Beer - whatever moniker you want to give them, we’re absolutely massive fans of reeling all that flavour intensity of our bigger beers into a beer that we can confidently smash pint after pint without worrying too much about our heads the following day. Taking inspiration from the universally loved various iterations of Kernel’s Table Beer series, Chasing Light is a massive step forward in our quest to hit those lofty peaks that the masters from London do every time without fail. Taking no liberties on the hop bill on these more sessionable and reeled in beers, we’ve gone for two absolutely huge statement hops to absolutely fill the flavour intensity to the max on this beer - Polly’s stalwart Simcoe, and every brewer’s favourite new hype hop Strata bring a metric tonne of juicy stone fruit and berry notes, backed up with intense passionfruit, bright tropical fruits, and that dank weediness that makes Strata so unique.

Hiraeth - Extra Pale Ale 4.3%

It’s almost transcended into legend at this point - one of our earliest brews here at Polly’s that attained legendary status amongst the people behind the beer wasn’t a hop-drenched DIPA, it wasn’t a tremendously intense DDH IPA, hell, it wasn’t even an IPA at all - it was a humble extra Pale Ale brewed with a combination of hops that worked so well together we were absolutely staggered every time we managed to get our hands on it. Simcoe Waimea XPA was a semi-regular feature of those halcyon Loka Polly beers and then it just…disappeared. Our inability to source Waimea hops meant this combination was very nearly lost to the archives until we were informed by our hop merchant that we’d secured the white whale on our hop contract for the year. Sweet mandarin, stonefruit, and berry notes take the softer flavours on this incredible pale ale, with an undercurrent of bright pine and resin keep things in check.

Render Melted - India Pale Ale 6.2% × 2

Whether it was those early Loka Polly brews, or the more modern Polly’s beers, we’ve always been huge advocates for simplicity in our tiny corner of North Wales. Sure, we could add a list of hops as long as our arm into a beer, but we heavily favour finding a combination of hops that sing in harmony with one another. Simcoe and Vic Secret as a combination runs as far back as our very early name change beers - we’re enormous fans of how well the straight up simplicity of Simcoe’s peach, apricot and berry notes play against Vic Secret’s clean pineapple and mango flavour notes, backed up with its slightly more aggressive pine profile. Going in with a larger than usual hot side addition of Vic Secret on this beer, a gentle but lingering bitterness lays a foundation before a burst of bright, punchy tropical notes come to play to remind you that this is definitely a Polly’s IPA in your glass.

Cube Factor - Mountain Pale Ale 5.3%

Where, oh where is the sweet spot when it comes to the Mountain Style? That style we first encountered four years ago around this time of the year when we were able to gauge a crash course by OG craft beer titan Doug Odell; a native of the very region the style encapsulates. Whilst we love the big brash nature of a Mountain IPA, we feel the opportunity to bring all that flavour intensity and cram it into pale ale strength so it can be enjoyed in pints was just too much to resist. Utilising our hazy beer water profile with a West Coast hopping rate, we’ve brought Comet to the party on the hot side of the brewing process on Cube Factor, with Amarillo utilised on the cold side to impart a metric tonne of ripe orange notes backed up with citrus rind pithy bitterness. All brought down to a healthy 5.3%, this is a pale ale for the hazy beer lover who wants a little bit of crisp bitterness to cut through those sweet flavour profiles.

Little Patternist - Pale Ale 5.0%

Another cult classic makes a return just in time for the clement weather. Originally brewed back in 2020 as a riposte against the flood of hop-drenched TIPAs and DIPAs being released at the time, Little Patternist was an experiment in seeing how in the same sense we love to scale up our beers, we likewise love to challenge ourselves to see if we can fulfil the flavour intensity and body of one of our IPAs, but reeled back to a sessionable strength. Patternist is and always has been the most underrated of the original three Augment beers, and we wanted to show it the serious love it deserves by showcasing those incredible El Dorado and Simcoe mango and pineapple notes, backed up with earthy bitterness, all condensed down into a super crushable, mega sessionable beer; perfected for sharing good times with pals.

Ella - Pale Ale 5.7%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. A product of the early 2000s rapid hop development program of Australia, Ella is a half-sister to the world-renowned variety Galaxy but with much more subtle characteristics to its more well known sibling. Fast tracked into commercial use in 2007 from its first cultivation back in 2000, this South Pacific slammer certainly delivers bang for its buck. Covering the usual Polly’s bases, this hop absolutely bursts with bright tropical notes, fresh picked berries, and stonefruit sweetness, backed up with a slight spicy and floral edge to balance things out.

Patternist - IPA 6.6%

The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since.

Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

Back for good as part of our Icons range, if Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map.
