Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love – showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Amarillo is a varietal interwoven into our history from those early Loka Polly days to now – part of that wonderful group of hops that bridge the gap between old school and new school. First discovered in 1990 but only released commercially in 2003, this varietal was revolutionary at the time for its higher than usual Myrcene content, releasing a metric tonne of lemon, orange and grapefruit notes that we think work spectacularly in a single hop IPA.
