We're well documented about how passionate we are for a pale ale here at the brewery. For all the supercharged, highly-hopped beers we produce, there's sometimes nothing better than the straightforward simplicity of a well made pale ale. The VIP Remix - originally brewed back in 2020 as a trial for a core range recipe - is everything we love about those reeled back, slightly lower abv beers perfect for supping several of. Featuring an easygoing and laid back four-way hop bill of Vic Secret, Mosaic, Idaho 7 and Citra, added in gentle amounts each step of the way, this beer bursts with all the typical Polly's notes; berries, apricot, passionfruit and mango, but with pronounced pine and earthy notes to keep everything in check, and wrapped up in our signature LA3 yeast profile.

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Idaho 7 has gone from a bubbling undercurrent varietal to one of our most highly used and dependable hops; holding its own alongside Polly’s stalwarts Citra, Mosaic and Simcoe. First developed back in 2015 at Jackson Hop Farm in Idaho, The Gem State’s first generation hop farm were working with Sierra Nevada at the time on a series of varietals to use in their beers, and the seventh submitted one really seemed to bridge the gap between tropical and citrus; with some striking melon, red berry, and most prominently, tangerine marmalade notes that blew them all away. Now Jackson’s primary source of output, we’re eternally grateful for their efforts and having scaled up to IPA and DIPA strength, we’re reeling it back for a laid back, easygoing pale ale.

Every now and again you just need to go headfirst into a beer with a single-minded plan in place. The plan for Sky Flights? Simple - straight up, freshly squeezed orange juice. How to create a boozy breakfast juice though? Say no more, and step forward the freshest crop of Amarillo paired with new-to-Polly's NZ behemoth Wai-Iti - a two hop combo simple in execution, but incredible as a pair. We've only brought a gentle addition of Amarillo to the party on this beer but boy does it bring the high-citrus notes to proceedings. Where do you go from there? Oh a heavy lashing of Wai-iti to bring a metric tonne of stonefruit and lime splash to this beer? Sure why not. Positively dripping with citrus notes, we feel we've hit the mark with this beer and then some.

It's back once again! A beer brewed with it in mind that trends were shifting away from the super-syrupy, boozy behemoths that graced 2020 and 2021, we’re seeing a lot of preference for straight up, simple and smashable pale ales. How do you stand out though when everybody is doing the same? You make the best dang pale ales you possibly can with the best combinations available to you, that’s what. Throughout our highly praised history, we were astounded to discover that we’d never combined Polly’s stalwart Simcoe with the enchanting Cashmere. Armed with the latest crop year of both, we immediately set about correcting this blip in our history and Floored Effect is the result. Intentional with our inclusion of Cashmere on this beer, we find pairing it with Simcoe causes those crisp and zesty lemon, lime and melon notes to absolutely sing, with subtle stone fruits in the back before mellowing out to a smooth bitterness perfect for the style.

It’s a pretty harrowing fact to admit, but as a six year old brewery we’re no longer considered new kids on the block anymore. Shock! Horror! What we might lack in bushy tails and bright eyes these days, we make up in knowledge of our craft and expertise at producing the absolute best hop forward beers we possibly can - in our opinion our beers have never tasted better. It’s with this in mind that we’ve tread that wonderful fine line between the pale ale and IPA territory to create Still Cool - a beer with all the mouthfeel and intensity of one of our IPAs but with the drinkability of one of our smashable pales. The flavour profile? Let’s go all out tropical - Nelson Sauvin, Sabro AND Talus bring soft pillowy juicy notes backed up with white wine grapes, dried roses and mint for a little complexity to boot. Definitely still cool.

We’re not quite sure what it is, but there’s just something about Polly’s stalwart, and lifeblood of the brewery for the past five years Citra when it’s paired up with another A-list, champions league hop varietal. Whether it’s because it’s the bridge between the old school pithy bitterness and new school haze craze we love so much is up for debate, but it’s positively glowing here in Eden. A straight up two-hop showcase of Citra and one of the most sought after varietals in the world in Galaxy, the brief on this beer is pretty straight up and simple - juice. Think a metric tonne of freshly squeezed limes, pithy orange rind, and ripe grapefruit, but backed up with soft peach, passionfruit, and guava to create a beer that is 100% positively Polly’s.

The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. A variety that just seemed to click with our then-fledgling brewery the very first time we used it, Waimea is a curious little NZ hop as complex as it is delicious. First released in 2012 and with a lineage that includes Californian Cluster, Fuggle and Saaz, this hop tends to lean heavily toward the high end of the alpha acid scale, but still manages to maintain some incredible flavour profiles. Best packaged into an easygoing pale ale as that original beer we used it on, expect a fruit salad of ripe mango, pomelo, plantains and papaya, with a very subtle undercurrent of pine to boot.
