The Hop Studio - Ella India Pale Ale 6.6%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Ella is a varietal that has an incredible back story, backed up by its potent flavour and aroma notes that make it perfect for a Hop Studio IPA. A half-sister to the world-renowned Galaxy hop, sharing the same mother plant, but with male parentage of noble German ancestry, we love how this causes delicate floral and spicy aromas, but on the palate a complete tropical punchbowl of flavour. Delicate, but at the same time aggressively flavoursome, Ella makes a welcome addition to the Hop Studio party.

Still Cool - Pale Ale 5.7%

It’s a pretty harrowing fact to admit, but as a five year old brewery we’re no longer considered new kids on the block anymore. Shock! Horror! What we might lack in bushy tails and bright eyes these days, we make up in knowledge of our craft and expertise at producing the absolute best hop forward beers we possibly can - in our opinion our beers have never tasted better. It’s with this in mind that we’ve tread that wonderful fine line between the pale ale and IPA territory to create Still Cool - a beer with all the mouthfeel and intensity of one of our IPAs but with the drinkability of one of our smashable pales. The flavour profile? Let’s go all out tropical - Nelson Sauvin, Sabro AND Talus bring soft pillowy juicy notes backed up with white wine grapes, dried roses and mint for a little complexity to boot. Definitely still cool.

Oh My... - Citra & Sabro Pale 5.8%

Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

Solid Love - Lime & Mango Imperial Gose 10.0%

As we head into the warmer months and the weather begins to brighten just that little bit more each day, we’re kindly reminded that festival season is fast approaching once again, and with it the influx of daft, silly festival beers to pour at them. After taking a similar concept with Red Odyssey, our triple fruited cherry imperial gose last year, we’re back once again on the super-fruited sour party train for Solid Love. Utilising a mixture of fruits we think work extremely well together in Mango and Lime, we’ve dumped just shy of a tonne’s worth of lime and mango into this beer, weighted heavily toward the mango. The result? A sweet, sticky, tart, slammer of a beer with tropical notes a-plenty but with a sharp citrus zest at the back to remind you that this is a Polly’s sour after all!

Rosebud - IPA 5.9%

Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA brewed in the New-England style; the most popular variant of the style in the world. We've hopped this beer with the freshest Citra, Galaxy, Mosaic, and Simcoe hops to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible flavour and mouthfeel, but sessionable enough to still smash pints of.

Spur - IPA 7.2%

Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

Haze Ardour - India Pale Ale 6.7%

It could be said that our ardour for the latest batch of South Pacific hops received from our hop merchant shows no signs of abating. With greater access to the varietals we could only dream about accessing when we first started this brewery than ever, we’re currently like kids with the keys to a sweetshop and utilising every combination we can possibly think of. A riff on the recently released Pura Vida, Haze Ardour brings a four-hop combination to proceedings, weighted heavily toward those antipodean hops we love so much, but with pillar of the brewery Citra to keep everything in check. Nelson Sauvin, Ella and Vic Secret are bringing the soft, juicy tropical notes with aplomb on this beer, but the use of Citra in the dry hop brings a zesty citrus edge to keep everything from falling off too heavily into the sweet juice.
