It’s almost the end of another year, but we’re all about perfecting that pyramid dry-hop technique we rave on about so readily. From its early use as an experiment during the heady days of peak lockdown to today, this technique has weaved its way in and out of our brew plans throughout the last three years. Explicitly designed to accentuate the boldest characteristics of each varietal in order of pungency, we’re bringing the pyramid back to the party here on Past Future. Leading the way with a big addition of Mosaic for juicy tangerine sweetness, we’ve added gradually cascading charges of Idaho 7, Simcoe and finally Talus for a four way dance of intense tropical notes a-plenty. Expect to find super ripe stone fruit, pink grapefruit, and just a whisper of pithy bitterness in this all out, amped up banger of a pale ale.

Oh to be back in those simple, carefree days prior to lockdown; when we had our eye on April 2020 for launching what was then a long-delayed core range. COVID-19 duly put a dampner on those plans, but it didn't dissuade us from smacking a new label on our core pale ale trial. The original version of Preliminary Flex was our first dip into a beer simple enough to brew again and again, but complex enough to keep people coming back again and again. Setting ourselves a very high bar against Steady Rolling Man, which we consider the best pale ale in the country; our effort is a simple but effective hop bill of Citra and Simcoe, with just a little bit of Columbus in the whirlpool, fermented out with our bespoke LA3 strain. Back again, and better than ever - it's good to have you back, Flex!

Lupo Capisco - Pale Ale 5.6%

Sometimes there's nothing better after a long day at the brew kit than a straight up, unfussy, clean and crisp pale ale. A beer specifically made with smashability in mind, Lupo Capisco is brewed with the masters of simplicity in mind - The Kernel, who in our opinion anyway, make some of the best pales that we can go back to again and again for in the UK. Hopped with a relatively easygoing dry-hop charge of Azacca and Citra, this is soft, juicy, and crisp, with a swagbag of mango and tropical flavours to complement their respective pithy bitter notes.

We’ve been hugely thankful to our hop merchant in recent times for granting us access to the newer and most hype-riddled varietals in circulation today. After a hugely popular trial run as part of the Pink Boots blend utilised in last year’s IWCBD beer and having revived interest during our collab with Funky Fluid later on in 2022 we wanted to shine a light on HBC 630 and all the flavour characteristics that it brings to the party in a fully 2023 kinda way. A certified swag bag of sweet cherry, raspberry and apricots lead the charge here with a smattering of pithy citrus notes from a gentle Citra addition to keep things in check.

Club Millennial - Pale 5.3%

Sometimes you’ve just got to create a beer that pays homage to your brewing heroes. We’ll fully admit that we’re complete and unashamed fanboys of the kings of the straight up, no fuss pale ale; The Kernel. Wanting to draw on what we feel is their best quality – bringing in and drawing the absolute best flavour compounds out of a combination of old and new school hops – we’ve created Club Millennial. Utilising a trio of Polly’s favourites in Centennial, Citra, and Galaxy, we find the aggressiveness of these varietals are best served in something a bit more sessionable and smashable. Centennial takes the lead in this beer, with a hefty whirlpool addition bringing the bitterness to the party, before an additional addition in the dry hop, paired with a generous addition of Galaxy and Citra bring the fruit forward flavour notes to this incredible pale ale.

Neither Odd Or Even - Pale Ale 5.6%

Anybody who has followed the brewery long enough will know we love to smash together previous hop combos from our dearly departed Originals range and create modern day frankenstein'd-together bangers. Citra Columbus always has a special place in our heart, after a particularly memorable after-work "sampling session" held by Sean and Arron, and we were huge fans of the original version of Enigma Simcoe IPA, so much so that we carried it over to the Augment range that now holds the brewery up. Smashing the two together and reeling back the ABV to a more sessionable 5.6%, we've created a pale ale that brings a swag bag of stone fruit, mango, peach and tangerine notes to the party, with just a little grassy bitterness to boot.
