Layers - India Pale Ale 6.5%

Layers. It’s all about the layers when it comes to our beers. A showcase in how the delicate process of dry-hopping our beers can create an absolute blossom of flavour, we’ve gone with a big Simcoe addition on this beer on the hot side to bring all those oils to the party like no other hop can - imparting a perfect foundation of earthy bitterness, with just a whisper of citrus zest and herbal complexity. Where to go from there? Layers, that’s where. Equal additions of Citra, El Dorado, Enigma, Idaho 7 and Mosaic in the dry-hop charge take this beer on a snaking path, bringing out the best flavour profiles from each of these hops. Think tangerine and bubblegum sweetness, marmalade, mango, grapefruit and red berries to offset our Simcoe base, all smashed together into a surefire Polly’s cult classic back for another spin.

Ode - India Pale Ale 6.9%

We often express how much we love to pay homage to the brewers of yesteryear here at Polly's, without whom we, or our contemporaries alike, would exist as we do. At the same time we love firmly expressing how much we love embracing our status as a very much modern brewery, producing the hop-forward styles so popular today. Ode is our literal address to old school and new school brewing, and our love of embracing the two in our beers. Chinook firmly represents the old school, being generously used in the whirlpool to impart delicious piney bitterness, Citra rocks up as the modern classic in the dry hop, bringing a wave of juicy citrus notes, and the future is handily dealt with by Bru-1 and it's incredible intense pineapple characteristics.

Patternist - IPA 6.6%

The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since

Dream Cycle - India Pale Ale 6.9%

We’ve always been about producing the boldest and brightest possible IPAs we can here at Polly’s. A group session on what flavour profiles would work best off one another yielded a suggestion of a three way dance between Citra, Nelson Sauvin and Motueka, and lo – Dream Cycle was born. Heavily weighted toward the South Pacific hop varietals we love so much, this beer positively bursts with fresh gooseberry and white wine grapes from Nelson, backed up with fresh lemon and floral notes from Motueka, before rounding off with delicious citrus notes from Polly’s classic, Citra.
