We’ve done the entire loop several times now - hoppy and hazy > silly fruited sour > aged imperial stout > simple lager and boy do we love settling into something wonderfully unfussy after putting our tastebuds through the gauntlet. A style that is easy enough to do, but notoriously difficult to master, there is absolutely no hiding behind a lager style and Picture This is our latest entry into this naked display of our brewing journey. Light, crisp and bready, with a subtle orange fruitiness from our gentle use of Amarillo in this beer, this is a beer perfect for kicking back and taking in those final throes of the summer sun.

A branch of the brewery that’s been quietly ticking along, improving with each batch, we feel we’re at a point now with our fruited sours that we can let ourselves completely loose in the same way we do with our huge pale and hoppy beers. Taking inspiration from the Kriek beers we used to knock back during our formative drinking years in our hometown, Way Out Cherry is a thick, fruit-soaked behemoth of a beer. Featuring a staggering 125kg of of sweet cherries, as well as 1.5kg of Halen Mon Sea Salt, sourced a stone’s throw away from the brewery, to create an imperial cherry gose positively bursting at the seams with flavour. The biggest experiment with our sour beers we’ve ever done, and a statement of intent where we’re going in the future.

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. First developed in 1974 and released in 1990, Centennial is one of the OG craft beer varieties that has stood the test of time against changing fashions and trends, and for good reason. Its dual versatility as a mega expressive aroma hop as well as a bittering hop lend to its lasting legacy, and as we round out 2023, it is fully back in vogue amongst the brewing community for the latest crop. Massively citrus forward in its flavour and aroma profiles, but with a consistent bitterness throughout, we could only have made use of this beer in a full-on, maxed out tribute to our brewing heroes The Kernel in a bold, brash single hop IPA.

The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Of all the newer school hops that exist in our day to day brewing here at Polly’s HQ today, there may not be one quite as fun to work with as El Dorado. A product of Moxee Farms in the Yakima valley and first cultivated in 2008, this Stateside variety displays exceptional characteristics across the board; from its high oil content that make it a wonderful bittering hop, all the way up to its aromatic profile that exhibits flavours of mango, pear, watermelon and (in our minds anyway) jelly tot sweets. All hail the hop as valuable to us here at Polly’s as its mythical namesake.

We’ve been hugely thankful to our hop merchant in recent times for granting us access to the newer and most hype-riddled varietals in circulation today. After a hugely popular trial run as part of the Pink Boots blend utilised in last year’s IWCBD beer and having revived interest during our collab with Funky Fluid later on in 2022 we wanted to shine a light on HBC 630 and all the flavour characteristics that it brings to the party in a fully 2023 kinda way. A certified swag bag of sweet cherry, raspberry and apricots lead the charge here with a smattering of pithy citrus notes from a gentle Citra addition to keep things in check.

Whilst we’re primarily known for our pale and hoppy output, there’s nothing we love more than occasionally dipping our toes into the dark side of things and embracing a stout to keep our brewers happy. In a world awash with crazy adjunct-riddled pastry and dessert stouts, we decided to bring everything back to basics and go all out on a style we ourselves loved in our formative years of drinking beer – the straight up, no fuss Imperial Stout. No messing around on this one; a tickling of Nelson during the boil and then again at flameout give the beer a decent amount of bitterness, but we’ve let the malt firmly do the talking with this beer. Roasted coffee, dark fruits, and chocolate are bursting from this stout that those starry eyed pre-Polly’s drinkers would have been proud of. Just as it says on the can; no nonsense.
